Jerusalem Arthichokes are cool. The plants are just amazing – growing over 7 foot tall with a minimum of attention. What’s more, they will come back again the next year, regrowing from bits of tuber left over after harvesting. Also, snails don’t seem to like them very much.
It was a bit of a challenge to find jchokes to plant in spring, since the season was over and shops weren’t stocking them anymore. But I was eventually able to get a dozen at Whole Foods. I buried them 4" deep and waited, not quite sure what to expect. Every one of them threw up multiple shoots that grew into the impressive plants you can see on the photo.
I’m very curious to see what we’ll be able to harvest in the fall.
