Back to the Roots

Roots have been doing really well this year (in spite of some initial challenges). Beet roots, carrots, celeriac, jerusalem artichokes – all are looking very strong and healthy. We’ve already been eating beets for several weeks; now the first carrots are ready to eat and celeriac shouldn’t be far behind. J-chokes are still a bit of an enigma – who knows what we’ll find when we dig them up in the fall. But judging by the huge stalks they’ve sent up there should be a bountiful harvest awaiting us. J-choke and potato mash … mmmh.
