Dehydrating garlicLast year we acquired a food dehydrator. We splurged on the top-of-the-line Excalibur and haven’t regretted it. A forced air dehydrator definitely is the way to go (as compared to convection models); and the big 9 tray model is not excessive if you’re even a little serious about dehydrating. And why wouldn’t you be? – It’s such a versatile method of preservation.

Some of the things that we’ve dehydrated successfully:

  • apples, pears
  • plums
  • figs
  • tomatoes
  • seeds
  • kefir crystals
  • herbs: sage, lemon balm, spearmint, oregano
  • garlic
  • bananas, oranges

And that’s just getting started. We’re looking forward to dehydrating grapes, cherries, peaches, and much more.
