We love fresh rice noodles and seek out restaurants that know how to make them well. But we never even contemplated making them at home. How on earth does rice flour transform into that elastic, smooth noodle? As it turns out, it’s not really that difficult. Here’s the video instruction we followed – and it really works. Yes, our noodles were a bit thicker and more uneven than at the restaurant; but the taste and texture were perfect.
