Casting about for some interesting thing to bring along to a neighborhood party, I had the idea of making some mini-brioches with various fillings. We have a 24-count mini-muffin tin, which seemed just the right size. We filled half of them with a rum-flavored crème anglaise; the other half with a goat cheese and herb mixture. They looked really nice – and I am pleased to report that we brought none of them back home again.
Brioches: I used a standard brioche dough, according to Hamelman’s recipe.
Sweet filling: a crème anglaise, flavored with a little bit of vanilla and rum
Savory filling: whipped goat cheese, salt, pepper, chopped chives, lemon juice, capers
